How to Steam Milk With an Espresso Machine

Purge the wand, set the tip just below the milk's surface, open the steam valve fully, and let air in for two to three seconds until the pitcher feels warm — then lower the pitcher so the tip submerges and the milk spins. Stop at 140–150°F. The whole process takes about twenty seconds, and every part of it that goes wrong goes wrong in the first three.

What you are actually trying to make

Steamed milk for espresso is not foam. It is a single, glossy liquid with bubbles too small to see, usually called microfoam, and it should pour like wet paint rather than sit on top of the coffee as a separate layer. That texture is what lets milk fold into an espresso instead of floating on it.

Two things happen at the wand: air is introduced, and the milk is spun so that the air is broken down into progressively smaller bubbles. They happen in that order, and the second takes far longer than the first.

The steps

1. Fill a cold pitcher to just below the base of the spout. Too much milk cannot spin; too little overheats before it textures.

2. Purge the wand for a second to clear condensed water, then wipe it.

3. Position the tip just under the surface, slightly off-centre so the milk will rotate rather than churn.

4. Open the steam valve fully. A half-open valve makes large bubbles and nothing else.

5. Listen. You want a soft, regular tearing sound for two or three seconds — that is air going in. Screeching means the tip is too high; silence means it is too deep.

6. Lower the pitcher slightly so the tip submerges. The sound should drop to a low whirl and the surface should rotate in a smooth vortex. This is where the bubbles get broken down.

7. Stop when the pitcher is too hot to hold comfortably — roughly 140–150°F. Milk scalded above about 160°F loses sweetness and cannot be re-textured.

8. Purge and wipe the wand immediately. Milk that dries inside a steam tip is the single most common cause of a wand that stops working.

Why your foam is bubbly

Large visible bubbles almost always mean you introduced air for too long, or the tip sat above the surface after the initial aeration. Air should go in only at the start; everything after that is spinning.

If the milk texture is fine but the pour is stiff, tap the pitcher once on the counter and swirl it before pouring. This merges the last of the surface bubbles.

Machines that do this for you

An automatic steam wand measures milk temperature and texture and stops on its own; a bean-to-cup machine with an integrated carafe removes the pitcher entirely. Both make consistently good milk drinks and neither teaches you to make them.

An assisted or panarello-style frother is a different thing again: it draws air through a sleeve and produces stiff foam rather than microfoam. It works for a traditional cappuccino and does not work for a flat white.
