What Temperature Should Milk Be?

Stop between 140 and 150°F. Below about 130°F the drink tastes flat and cools too fast; above about 160°F the proteins denature, the natural sweetness disappears and the texture collapses. Milk cannot be re-textured once scalded, so the ceiling matters more than the floor.

Why 150°F is the ceiling

Milk tastes sweet because heating converts some of its lactose and releases aromatic compounds. That process peaks around 140–150°F. Past roughly 160°F the whey proteins denature and start producing sulphur notes — the cooked, slightly eggy flavour of milk taken too hot.

The texture goes at the same point. Foam is stabilised by intact proteins; once they have denatured the bubbles collapse and the milk separates in the cup.

How to judge it without a thermometer

Hold the pitcher by the side rather than the handle. When it becomes uncomfortable to keep your hand there, you are at roughly 150°F. That is the whole technique, and most people calibrate to it within a week.

A cheap stick-on or clip thermometer removes the guesswork for the first fortnight. After that you will not need it.

Plant milks run cooler

Oat, almond and soy milks scorch at lower temperatures than dairy and turn thin and chalky. Aim for 130 to 140°F.

Barista-formulated versions tolerate more heat because of added protein and fat, but they still reward stopping earlier than you would with dairy.
