Hard Water vs Soft Water for Espresso

You want the middle: roughly 50–100 ppm total hardness. Hard water scales the machine and mutes the coffee; very soft or zero-mineral water extracts flat, hollow espresso and can corrode boilers. Minerals are the vehicle extraction happens through, so removing all of them is not an improvement.
What hardness actually does
Calcium and magnesium are what make water 'hard', and they do two opposite things. In the cup they help dissolve and carry the compounds that make coffee taste of anything. Inside the machine they precipitate out as scale on the hottest surfaces.
That is the whole tension: the same minerals you want in the water are the ones destroying the boiler. The answer is a moderate amount rather than none.
Too hard
Above about 180 ppm, scale forms fast enough to be the defining maintenance issue. Symptoms arrive in order: longer heat-up, slower shots, weaker steam, then blockage.
In the cup, very hard water tends to flatten acidity and make coffee taste dull and chalky.
The fix is filtration rather than more descaling. A cartridge in the tank reduces hardness before it reaches the boiler.
Too soft
Below about 40 ppm, extraction suffers noticeably: the coffee tastes thin, hollow and lacking sweetness, because there is nothing in the water to carry the solubles.
Zero-mineral water — distilled or reverse osmosis with nothing added — is also aggressive toward boiler metals and prevents conductivity-based water sensors from detecting a full tank.
Naturally soft municipal water is usually fine; it is engineered-to-zero water that causes problems.
