How to Backflush an Espresso Machine

Updated

Fit a blind (unperforated) basket, run the pump for about ten seconds and stop, repeat five times, then rinse the same way with the basket empty of detergent. Only machines with a three-way solenoid valve can be backflushed at all — on any other machine, running a blind basket puts pressure somewhere it was not designed to go.

Check first: does your machine have a three-way valve?

A three-way solenoid valve releases the pressure behind the puck when the shot ends — it is why the puck comes out dry on some machines and soupy on others. That valve is also the route backflush water takes when it is forced back out of the group.

Without one, there is nowhere for the water to go. Backflushing a machine that lacks a three-way valve stresses the pump and seals to no benefit. If you are unsure, check whether your machine's own manual describes a backflushing procedure; if it does not, it almost certainly cannot be backflushed.

The procedure

1. Fit the blind basket into the portafilter. With detergent, add the small measure specified by the manufacturer — more is not better and is harder to rinse out.

2. Lock the portafilter in and start the pump. Pressure will build with nowhere to go; that is the point.

3. Run for about ten seconds, then stop. You should hear the valve release.

4. Repeat five times, then remove the portafilter and rinse it.

5. Refit the blind basket with no detergent and repeat the cycle another five times to rinse the group.

6. Pull and discard one shot of water through a normal basket before making coffee.

How often

Water only: weekly for a household machine, or after any heavy session. Detergent: monthly is a common manufacturer recommendation for domestic use.

The symptom of neglect is a bitter, ashy taste that survives changing beans, because rancid coffee oil in the shower screen is being extracted into every shot.

What to do if you cannot backflush

Remove and soak the shower screen and dispersion block periodically, scrub the group gasket area with a group brush, and soak baskets and portafilters in a coffee-oil detergent solution. It is more work than backflushing and it addresses the same problem.

Frequently asked

Can every espresso machine be backflushed?
No — only machines with a three-way solenoid valve. On machines without one there is no path for the water, and forcing the issue stresses the pump and seals.
How often should I backflush?
With water weekly, with detergent roughly monthly for home use. Heavier use shortens both intervals.
Is backflushing the same as descaling?
No. Backflushing removes coffee oils from the brew path with detergent. Descaling removes mineral scale from the water path with acid. Both are needed, on different schedules.
What happens if I use too much detergent?
It becomes very difficult to rinse out and the residue tastes soapy in the next several shots. Use the measure the manufacturer specifies and rinse thoroughly.
