How to Clean an Espresso Machine

Three routines on three schedules. After every session: purge and wipe the steam wand, knock out the puck, rinse the group. Weekly: backflush with water or rinse the brew group, and soak baskets and the portafilter. Monthly: backflush with detergent. Descaling is a separate job on its own schedule, set by your water rather than by the calendar.

Cleaning and descaling are different jobs

This is the distinction that causes the most confusion. Cleaning removes coffee oils from the brew path, using a detergent. Descaling removes mineral deposits from the water path, using an acid. They use different products, run on different schedules, and neither substitutes for the other.

Skipping cleaning makes the coffee taste bitter and stale. Skipping descaling eventually ends the machine.

After every session

Purge the steam wand and wipe it with a damp cloth. Dried milk in the tip is the most common cause of a wand that stops working.

Knock out the puck, wipe the basket, and run a short flush through the group to clear grounds from the screen.

Empty the drip tray when the float shows, and on a bean-to-cup machine empty the grounds container before it packs solid.

Weekly and monthly

On a portafilter machine with a three-way valve: backflush with water weekly and with detergent roughly monthly, using a blind basket. On a machine without that valve, remove and soak the shower screen instead, and scrub the group with a brush.

On a bean-to-cup machine: take the brew group out and rinse it under the tap weekly, if the manufacturer designed it to come out. Brush the grinder chute — stale oil there tastes like stale coffee no matter how fresh the hopper.

Soak baskets, the portafilter body and drip tray in a coffee-oil detergent solution monthly. Never put brass parts or a portafilter in a dishwasher: detergent strips the finish and pits the metal.

Milk systems: rinse a two-part carafe after every use; run the automatic cleaning cycle on any system with internal milk lines after every session, without exception.
