How to Froth Non-Dairy Milk

Use barista-formulated versions, introduce about half the air you would with dairy, and stop roughly 10°F cooler. Plant milks foam on added protein and fat rather than on their own, which is why standard supermarket versions froth briefly and then collapse.
Why plant milk behaves differently
Dairy foams on its whey proteins and is stabilised by its fat. Oat milk has very little of either; almond has less again. Barista editions add both, plus stabilisers, specifically so they behave like dairy under a steam wand.
That is not marketing. The difference between standard and barista oat milk at the wand is larger than the difference between whole and skimmed dairy.
By milk
Oat: the most reliable plant milk and the closest to dairy in behaviour. Sweet, slightly heavy, holds a pour well. Stop at 130–140°F.
Soy: foams well and is prone to curdling in contact with hot, acidic espresso. Pour soy into the coffee rather than coffee into the soy, and avoid very light, acidic roasts.
Almond: the hardest. Thin, low protein, splits readily. Barista versions are effectively required.
Coconut and rice: foam poorly and are better treated as flavours than as texturing milks.
Technique adjustments
Halve the aeration time — one to two seconds rather than three or four. Plant foam is fragile and over-aerating produces large bubbles that cannot be broken down.
Stop earlier. Scorched oat milk tastes thin and cardboard-like, and it happens at a temperature dairy would tolerate.
Clean more often. Plant milks contain sugars and stabilisers that dry harder than dairy residue and block steam tips faster.
