Oat milk froths on a different chemistry from dairy. Cow's milk foams on its proteins and is stabilised by its fat; oat milk has very little of either unless it has been formulated for the job, which is what "barista edition" means on the carton — added protein, added fat, and often a stabiliser. That difference has two practical consequences. It needs noticeably less air, because what foam it does produce is fragile and easily overworked into large bubbles. And it has a narrower temperature window, because oat milk scorches and turns thin at a temperature where dairy is still fine. Neither is a problem on a machine that lets you control the process or one that has been programmed specifically for plant milks — several manufacturers now publish separate dairy, soy, almond and oat profiles with different air and temperature targets. It is a problem on machines with a single fixed frothing routine designed around dairy. What to look for

The most useful specification here is one manufacturers have only recently started publishing: dedicated alternative-milk profiles. A machine with separate oat, soy and almond settings is telling you it varies air injection and target temperature by milk type, which is exactly what the chemistry needs. Where a machine only offers one milk programme, it was almost certainly tuned on dairy.

If you are steaming manually, control matters more than power. Introduce air for about half as long as you would for dairy — one to two seconds — and stop heating earlier, around 130–140°F rather than 150°F. A wand with a responsive valve makes that easier than one that is effectively on or off.

Buy barista-formulated oat milk and most of the difficulty disappears. Standard oat milk will froth, badly and briefly. The barista versions exist because cafés hit exactly this problem at scale, and they behave close enough to dairy that the same technique works.

Clean more often than you think. Plant milks contain sugars and stabilisers that dry harder than dairy residue and are noticeably better at blocking a steam tip. Purge and wipe the wand every single time, not at the end of the session.

Finally, a note on taste rather than hardware: oat milk is sweeter and more assertive than dairy, and it will change how your coffee tastes. A darker roast that tasted balanced with milk can turn heavy. This is a bean question rather than a machine question, but it is the one people blame the machine for.
