Cappuccino is forgiving in a way that flat whites and lattes are not. The traditional build is roughly equal thirds espresso, steamed milk and foam, and that top layer is supposed to be visible, stiff enough to hold a dusting of chocolate and distinct from the milk underneath. What to look for

Start with how the milk is handled, because it decides the whole experience. An integrated carafe froths and pours automatically: press cappuccino, get cappuccino. A bare steam wand puts you in charge of the air and the temperature. An assisted frother sits between the two, drawing air in automatically through a sleeve — less control than a wand, less convenience than a carafe, and perfectly adequate for this specific drink.

Then think about steam capacity, which matters more for cappuccino than for any other drink because you are aerating more milk. A single-boiler machine has to switch between brew and steam modes and wait each way; that is a minor irritation for one drink and a real one for three. Heat exchangers and dual boilers steam continuously.

Check the pitcher and wand geometry if you are steaming by hand. A wand that sits too low or too close to the drip tray makes it awkward to get the pitcher at the angle that creates a vortex, and the vortex is what breaks big bubbles into small ones. Manufacturers rarely publish this, so photographs are your evidence.

If you are choosing an automatic system, look at how it cleans. A carafe with two parts and no internal tubing rinses in seconds; a system with milk lines running through the machine needs a cleaning cycle after every session or it sours. This is the single biggest long-term difference between automatic milk systems and it is almost never mentioned at the point of sale.

Finally, remember the espresso still has to be good. Cappuccino hides a mediocre shot better than a flat white does, but it does not hide a sour one.
