Start with the honest version of what these machines do, because the category name misleads. With a small number of exceptions, an espresso machine sold for iced coffee brews a normal hot shot and the ice does the cooling. Nothing is wrong with that — it is how iced lattes are made in most cafés — but it means the specifications that matter for iced drinks are not exotic. They are the ones that keep the drink from tasting like weak coffee once the ice melts. The first is shot concentration. Ice adds water, so a shot pulled to a normal ratio and poured over a full glass of ice arrives diluted. Machines that let you shorten the yield, raise the dose, or select a stronger aroma setting give you a shot built to be diluted. Bean-to-cup machines that expose a strength control do this well; so does any portafilter machine, because you set the ratio yourself. The second is milk, and specifically cold milk. An iced latte wants cold textured milk, not hot foam poured onto ice. A growing number of automatic machines publish a dedicated cold-milk or cold-foam function, and that is the single most useful feature on this page. What to look for

Concentration control is the first thing to look for: a strength or aroma setting on a bean-to-cup machine, or simply the ability to set your own ratio on a portafilter machine. A shot you cannot make stronger will taste thin over ice.

Cold milk texturing is the feature that separates an iced latte from hot milk on ice. Where a manufacturer publishes a cold-foam or cold-milk function, we say so; where it publishes only hot milk programmes, expect to texture cold milk yourself or use it straight from the carton.

Volume matters more than for hot drinks. Iced drinks are larger, so a small water tank and a small bean hopper are felt sooner. Tank size is published for nearly every machine and is easy to check.

A dedicated iced or over-ice programme is a convenience rather than a different extraction. It usually means the machine brews a shorter, stronger shot and sometimes cools it slightly. Useful; not transformative.

Finally, do not pay for cold extraction you are not getting. If the specification describes an iced recipe rather than a cold brewing process, the machine is making hot espresso over ice, and it should be priced against machines that do the same.
